Soba Noodle Salad

I've been working on a soba noodle salad lately and last night I think I nailed it. I like this recipe because its (a) pretty healthy with all the raw veggies, (b) its super easy and (c) its easily adaptable. i.e. you could add more noodles to increase the servings or you could add shredded chicken or tofu to make it a heartier main dish. Here it is if you want to try it...

SOBA NOODLE SALAD

1 tbsp. honey
1 tbsp. soy sauce
1 tbsp. mirin
2 tbsp. rice wine vinegar
1/4 tsp. ginger
3 tbsp. sesame oil*

1/4 head of red cabbage, thinly sliced
1 cucumber, peeled & seeds removed, cut into matchsticks
1 red pepper, cut into matchsticks
1 carrot, shredded
1 scallion, chopped

3-4 oz. soba**
3/4 tsp. kosher salt, or to taste

1/4 c. chopped cashews
1/2 tsp. crushed red pepper

whisk together the first 5 ingredients until the honey and ginger are dissolved then keep whisking as you add the oil. combine the cabbage, cucumber, red pepper & carrot in a medium size bowl and add the dressing. set aside.

cook the soba according to the directions on the package and when its done rinse under cold water and let drain well. meanwhile, toast the cashews and crushed red pepper together in a dry skillet then set aside to cool.

add the noodles to the veggie mixture and salt to taste. serve topped with the cashews and chopped scallion.

Makes 2 huge servings.

*if you don't like the sesame oil flavor or your sesame oil is especially strong you can substitute part with vegetable oil or peanut oil.

**there is plenty of dressing to increase the amount of noodles if you like. i use a 10 oz. package from trader joes that is divided into 3 parts and one "part" is 3-4 oz.

Um...you're RAD. And I'm LOVING the visual. This sounds so yummy! When the ki is over and done w/, I am FOR SURE making it.
